Plant-based Diet Day 1

I knew it would be a challenge when I woke up wanting to eat something with cheese.

Meals

Breakfast:
2 slices of whole wheat toast (which has oil in it, but it is almost impossible to find bread without oil in it)
Strawberry preserves
V8 Juice
Iced Coffee

Lunch:
Chipotle salad with black beans, corn salsa, pico de gallo, mild salsa and fajita veggies (which is a cheat because they cook it in oil).

Dinner:
3 Beers
Spicy spaghetti I made with onions, chili peppers, Crystal hot sauce, portabella mushrooms, garlic, tomato sauce and diced tomatoes.

I sauteed the ingredients in a splash of white wine and the hot sauce, then poured the canned tomatoes and sauce and let that simmer for a bit. Pour over whole wheat pasta. Simple, filling and takes 15 minutes to cook.



Cheat Confessions (yep, I totally cheated on day 1).
I had 5 pieces of plain m&ms, a bite of vegetarian lasagna and a couple of pieces of orange chicken leftovers. I had to get rid of them because I took some home from a party. I got rid of them so I won't be tempted tomorrow. Hopefully the cheating will be less frequent.
